Shirred eggs with goat cheese and dill
Super easy and tasty, not to mention pretty. Healthy food is much more appetizing when it is presented well. Inspired by both Ina Garten and Judith Jones, who partnered with Julia Child on one of her first cookbooks. Use whatever herbs and cheese you have on hand, though it was delicious with goat cheese.
Ingredients (for one):
1/2 Tbsp butter
1 Tbsp milk
2 eggs
salt and pepper
1 Tbsp goat cheese
1/2 clove minced garlic
1 tsp chopped dill
Heat broiler and move a rack about 6 inches away from heat.
Put butter and milk in ramekin or shallow oven-safe gratin dish. Place in oven 6 in from heat. Leave about 3 minutes until hot and bubbling.
Meanwhile, crack eggs into a bowl and ensure no shells. In a separate bowl, mix cheese, garlic and dill.
When butter mixture is hot, pour in eggs and cheese and season with salt and pepper. Leave about 5-10 minutes depending on height of dish, until eggs are almost set and only slightly jiggly. Remove from oven, let set for one minute and enjoy! Use some toast points to scoop up the tasty remains from the dish.
